Yesterday evening I saw a photo of someone eating one of those steamed bao buns on Instagram. Which immediately led me to Google “bao buns Edinburgh”, which then took me to several articles, one of which being ’10 best cheap Edinburgh cafes and restaurants’. That ofc opened up a whole new can of worms because suddenly I have a huge list of all these fun cafes I’ve never been to. So I ran immediately to the husband and told him we’re getting buttermilk pancakes for breakfast. Long gone were my thoughts of bao buns. This morning we put our warmest clothes on and walked over to The Bluebird Cafe for pancakes. WHAT A WAY TO START A THURSDAY, right?! The Bluebird Cafe is a tiny little deli/cafe that is Southern inspired and serves things like pulled pork, french toast, buttermilk pancakes etc. It was really, really cozy and seeing as we got there pretty early it was nice and quiet (they open their doors at 6 AM FYI..pretty cray). Rob got the banana french toast with bacon which was amazing and I got the buttermilk pancakes with maple syrup. Totally regretted not getting it with bacon but I’ll leave that for next time 🙂
